Maharashtrian Popular Traditional Dish - 'PURANPOLI'

https://youtu.be/cNCI2GRMjwc 'PURANPOLI' is a popular maharashtrian stuffed sweet flatbread that has a delicious filling prepared with chana dal (Split Bengal Gram) and Jaggery.

Puran means sweet filling and Poli means Flatbread. PURANPOLI is made for special occasions and festival like Holi, Gudhi Padwa, Ganesh Chaturthi, Bailpola, Diwali etc.

The Dough to make puranpoli  is made using whole Wheat Flour or All purpose flour but  I use only wheat flour. and add pinch of Turmeric powder, it to give a lovely color to the poli and add pinch of salt.

In maharashtra, the filling is prepared by Chana dal, Jaggery,Cardamom Powder. This PURANPOLI is Delicious, Easy to make, Full of flavour, Perfect for Festivals





Ingredients : For the Dough:

  • The dough of Puranpoli prepared with whole wheat flour, Salt, Water, Pinch of Turmeric. You can also replace some whole wheat flour with All purpose flour to make it flakier.
  • On a plate, take wheat flour, Add salt to taste, Add pinch of turmeric, it helps to give color to poli.


  • Add a little water at a time and make a soft dough of it.
  • Don't add more water at a time .
  • The dough should be a little thin.
  • Add oil and knead the dough again.
  • Repeat the procedure until the dough doesn't stick to your hand


  • Transfer the dough into a bowl, cover and give it a standing time of 1 1/2  hours.


For Puran (Stuffing):

  • Take chanadal, wash it really well. Add water  and Soak it for 3 hours.



  • Transfer the dal with water in the cooker and cook on medium heat until 7-8 whistles.

  • Drain excess water with the help of a strainer.



  • Do not throw away this water, You can use it to make KATACHI AMATI. Add a little mashed dal with it if you want.
  • Strained dal transfer into pot onto medium flame and add grated jaggery, Mix well.



  • Cook Puran on gas, Mix mashed dal and jaggery and cook on medium heat.


  • Stir continuously and cook until puran thickens up.
  • Then after 10 minutes this Puran add into mixer jar and all puran is blend by mixer.



Method of  PURANPOLI:

  • Take medium size ball of dough and make pari.
  • You can roll 6" poli from this ball, Stuff puran like paratha and make puran poli too.
  • Stuff puran in pari and seal it from all sides.



  • Dip it in dry flour and roll poli.



  • Heat up a pan on medium flame, When pan is enough hot, transfer the rolled poli on pan.

  • Roast from one side until small bubbles begin to appear.



  • Flip over again and spread ghee on another side again.
  • Roast from both sides really good.

Puran poli is ready, Serve with Katachi amati, Batatyachi Bhaji.

Healthy and Nutritious Drum Stick Soup

 Healthy and Nutritious Drumstick soup which taste so delicious. It is rich in iron and is full of health benefits. This soup taste amazing with some toasted bread. This is great for kids and adults. 

The fabulous aroma and flavor of a bowl of drumstick soup boosts immunity and treats mood disorders.

Generally we add drumsticks in dal or sambar. Try this soup which is very yummy and not very difficult to cook.

  • Hope you will give this a try and let see how it make.


Ingredients :
Drumsticks 5 nos.
Onion 1
Tomato 1
Garlic-Ginger-Coriander Seeds-Cumin Seeds Paste   2 tsp
Cloves  4 nos.
Black paper paste 2 tsp
Corn Flour paste  2 1/2 tsp
Extra Water for to make soup
Fresh Coriander Leaves for Garnishing.
Butter or oil 

Recipe :
  • Take Drumstick 4-5 nos. and cut into large pieces. Also take Onion 1 and Tomato 1 and cut into small pieces.

  • They all take it in the cooker, Add water 1 glass  and cover with lid, Cook it while 3 whistles.
  • Cool down cooker and other side to make Garlic, Ginger, Coriander seeds, Cumin seeds fine paste.


  • Take 7-8 Black paper and to make fine paste and take 4-5 Cloves.


  • Take 2 tsp corn flour add into water to make paste without lumps.

  • Open the Cooker lid and remove the drumsticks from water and leave to cool. Do not throw away the stock. we will use it in the soup.


  • Open the drumsticks just by pressing them by fingers; Scoop out the pulp using a spoon or knife. Do not discard seeds. Scoop them along with pulp.


  • Cooked onion, tomato transfer into blender and also drumsticks pulp along with seeds transfer into same blender


  • Blend this all together and make smooth paste, add water and again blend it.
  • Strain out all this smooth mixture, add water for to make soup.


  • Heat oil or butter in a pot. Add cumin seeds ,wait till splutter.


  •  Add ginger, garlic, coriander seeds, cumin seeds paste  and saute them well.


  • Pour drumstick stock or soup into pot, add 3 tsp strained pulp into soup because it helps to give it aroma and flavor; Mix well.


  • Add black paper paste and 4-5 cloves.




  • Take drumsticks scoop out skins are in the water, those are also blend and strain out or squeeze in water and made the stock.
  • This stock pour into soup. 


  • Add Corn flour paste and salt as per taste. Mix well together.


  • Boil the soup on medium flame for about 10-15 minutes.


  • Chopped fresh coriander leaves add into soup.


  • Delicious drumstick soup is ready, Serve hot.

Maharashtrian Street Food : 'PAVBHAJI'


'PAVBHAJI' is popular Indian street food that consists of a spicy mix vegetables mash or soft bun. Pavbhaji is served with a generous amount of butter topped along with some fresh chopped onions and lemon juice. The butter toasted pav are eaten along with the veggie mash or bhaji.

The Pavbhaji made from veggies like Potatoes, Cauliflower, Capsicums, Green Pease are used in little quantities.  But I used veggies in my recipe here only Potatoes and Green Pease and skipped remaining veggies like capsicums, Cauliflower etc.

There are many Pavbhaji Masala Powders available in the market which can be used instantly. Each one differs in the flavor and taste. But the basic ingredients almost the remain the same. So I don't use any Pavbhaji masala powder used in my recipe.

I have shared it here in brief.




Ingredients :

Onion 2 nos.

tomato 2nos.

garlic-ginger-coriander leaves paste   2tsp

Green Pease  1/2 kg

Small Potatoes  8 nos.

Red chutney(Red chilly-onion-garlic masala) or chilly powder 2 tsp

Fresh coriander leaves 

Butter

oil

Pav (Bread) as your requirement


Recipe :

  • Add Potatoes and Green Pease to a pressure cooker, You can add required any veggies like cauliflower, carrot, capsicum etc. Pour 2 cups water. It should be just enough to cover them partially.


  • Cook until the 4 whistles on medium flame. 
  • When the Pressure releases open the lid. veggies should be soft cooked. 



  • Smash Them well.




  • Heat 2 tsp Oil and 1 tsp butter in a Pot. Add Chopped onions,  Saute till they turn translucent.
  • Add 2 tsp ginger-garlic-coriander leaves paste. Fry until it smells good. Take care not to burn.


  • Add finely chopped tomatoes and 3/4th tsp salt, Fry till tomatoes turn mushy, soft and pulpy.


  • Add the Boiled smashed potatoes-Green Pease mixture. Add 1/2 to 3/4th cup water to bring it to a consistency.


  • Add Red Chutney ( red chilly-onion-garlic masala) or red chilly powder 2 tsp and salt as per taste and mix well together.


  • Mix well and Fry for 2-3 minutes then Simmer for a while to bring out the flavor.
  • When It reaches the desired consistency, add chopped coriander leaves, Switch off the gas, Slightly cool down and add some lemon juice before serving.



Toasting Pav

  • Slit the pav horizontally leaving one edge intact. On a low flame,  heat 1 tsp butter on a tawa.


  • Place the pav on the butter and the toast for 1-2 mins until slightly crisp. You can do the same on the other side as well by adding more butter on the pan.

  • Garnish with Coriander leaves, lemon wedges and  chopped onion. Top with more butter on hot bhaji. 
Serve delicious hot Pavbhaji and enjoy.
