'PAVBHAJI' is popular Indian street food that consists of a spicy mix vegetables mash or soft bun. Pavbhaji is served with a generous amount of butter topped along with some fresh chopped onions and lemon juice. The butter toasted pav are eaten along with the veggie mash or bhaji.
The Pavbhaji made from veggies like Potatoes, Cauliflower, Capsicums, Green Pease are used in little quantities. But I used veggies in my recipe here only Potatoes and Green Pease and skipped remaining veggies like capsicums, Cauliflower etc.
There are many Pavbhaji Masala Powders available in the market which can be used instantly. Each one differs in the flavor and taste. But the basic ingredients almost the remain the same. So I don't use any Pavbhaji masala powder used in my recipe.
I have shared it here in brief.
Ingredients :
Onion 2 nos.
tomato 2nos.
garlic-ginger-coriander leaves paste 2tsp
Green Pease 1/2 kg
Small Potatoes 8 nos.
Red chutney(Red chilly-onion-garlic masala) or chilly powder 2 tsp
Fresh coriander leaves
Butter
oil
Pav (Bread) as your requirement
Recipe :
- Add Potatoes and Green Pease to a pressure cooker, You can add required any veggies like cauliflower, carrot, capsicum etc. Pour 2 cups water. It should be just enough to cover them partially.
- Cook until the 4 whistles on medium flame.
- When the Pressure releases open the lid. veggies should be soft cooked.
- Smash Them well.
- Heat 2 tsp Oil and 1 tsp butter in a Pot. Add Chopped onions, Saute till they turn translucent.
- Add 2 tsp ginger-garlic-coriander leaves paste. Fry until it smells good. Take care not to burn.
- Add finely chopped tomatoes and 3/4th tsp salt, Fry till tomatoes turn mushy, soft and pulpy.
- Add the Boiled smashed potatoes-Green Pease mixture. Add 1/2 to 3/4th cup water to bring it to a consistency.
- Add Red Chutney ( red chilly-onion-garlic masala) or red chilly powder 2 tsp and salt as per taste and mix well together.
- Mix well and Fry for 2-3 minutes then Simmer for a while to bring out the flavor.
- When It reaches the desired consistency, add chopped coriander leaves, Switch off the gas, Slightly cool down and add some lemon juice before serving.
Toasting Pav
- Slit the pav horizontally leaving one edge intact. On a low flame, heat 1 tsp butter on a tawa.
- Place the pav on the butter and the toast for 1-2 mins until slightly crisp. You can do the same on the other side as well by adding more butter on the pan.
