Healthy Instant Quinoa and Cucumber Dosa

Hi Guys, I'm Amruta, I can say this is very healthy and easy variety of dosa using Quinoa and Cucumber. This Cucumber Quinoa dosa is perfect for people following law carbs diets or diabetic friendly diets. This can be served for breakfast or dinner. As it needs no fermentation, This can be done instantly.

  • Quinoa is a considered a whole grain, though it is basically an edible seeds from its plant.
  • Quinoa is considered to be one of world's healthiest grain. And also, to be considered whole protein as it contains all the nine amino acids, required very much the body.
  • It is slowly digestible carbohydrate  and  It is very high in dietary fibers.
  • Quinoa is very good source of Calcium, Magnesium and manganese.

Ingredients:
  • 3 cup Quinoa
  • 3 medium cucumbers
  • 1 cup Fresh Grated coconut
  • Ginger-Garlic-Green chilies
  • Coriander Leaves
  • Cumin seeds
  • Oil
  • Salt as per taste.

Method:

  • Wash Quinoa in water multiple times. Due to the natural coating called saponin. There will be the foamy water when you start washing Quinoa. So, wash throughly until the foam is gone and water runs clear. 

  • After than Soak the quinoa for 30 mins or 1 hour. Then Grate Cucumber along with the skin and  Also grate Fresh Coconut and keep it aside.
  • After 30 mins or 1 hour, Drain the water from quinoa and wash it once again. Drain the water and transfer quinoa to the mixing jar, Add 1-2 tbsp water and not more than that. Blend it to smooth thick paste, We should blend it separately and then add the other ingredients.
  • Blended quinoa's Thick past transfer to big mixing bowl.
  • Then add other ingredients like Green Chillies, Ginger, Garlic, Cumin Seeds, Coriander Leaves, Grated Fresh Coconut, Grated Fresh Cucumber, Blend it to smooth Paste without adding any water. and transfer to the same mixing Bowl.



  • Add Salt as per taste and Add pinch of Soda. mixing well batter.

  • Heat the tawa, If it is Cast Iron Tawa, Drizzle some oil or rub with onion, once it turns hot.
  •  The Consistency should be like that of the usual dosa batter.

  • Pour a Ladle full of batter onto the tawa. Spread it uniformly. 

  • You can spread it thin as you want or keep it thick. based on your taste.
  • If you batter is spread it thick then it cook one side after flip it and cook also other side.






  • Serve The hot Dosa With Coconut Chutney.
