BATATA WADA - Maharashtrian Popular Fast Food

Welcome guys,  Batate wada is all time my favorite dish, Its popular fast food in Maharashtra.
The dish consist of mashed potato bhaji coated with chickpea flour.  
Batata wada is accompanied by green chutney or dry chutneys such as shengdana chutney. It is served with pav and hot green chillies.

Ingredients:
  • Boiled potatoes 4-5
  • mustard seeds 1/2 tsp
  • Cumin seeds 1/2 tsp
  • Chopped onion 2 nos
  • green chillies-garlic-ginger paste 2 tsp
  • Curry leaves 6-7 leaves
  • Salt as per taste 
  • Coriander leaves
For coating:
  • Besan 9-10 tsp
  • Rice flour 2 tsp
  • Ajwain 1/2 tsp
  • salt as per taste
  • Water
Recipe:
  • Potatoes are boiled into pressure cooker up to 3 whistles and prepare for its sabji for wada 
  • then take a kadhai on gas , put  2-3 tsp. oil into kadhai after heat oil  then muster seeds and cumin seeds add in oil , make ginger garlic and green chilly fine past and add into oil , add curry leaves and fry till crisp, and  add Hing, turmeric , salt   and mix it. then add crumbled potatoes and coriander leaves and mix everything well  and plate put on kadhai  and  cooked on medium flame  2 mints again mix well and turn off gas.

  • cool this mixture and make small and flattened balls .

  • To a mixing bowl add besan , rice flour, Ajwain, salt as per taste, mix it very well and add water as needed to make a thick batter. 



  • This is the consistency of batter, if batter made thin, then its not proper covering potato balls and wada may break while frying.
  • I have added small pinch of soda to the batter just before dipping the potato balls in the batter. this gives the light texture to the covering. add it if using and the beat the batter for few seconds.
  • Heat oil in another kadhai on a medium flame for fry balls, do not use very less oil. check the oil is hot enough by dropping a small portion of batter. it has to rise.
  • When oil is hot enough , the balls coat  well with batter  and drop  in hot oil . i use my fingers for drop coated balls in oil , you can use spoon for drop coated balls.
  • At least 2 mints fry one side other wise it can be break, stir them gently and fry all side well.
  • When they are crisp and golden brown and drain them to kitchen tissue.

Serve Batate Wada hot with green chutney . some fried green chilies on side , you can eat them with bread make sandwich, you can eat only wada , its so delicious....
