Crispy And Fluffy Medu Wada

 Welcome Guys, I'm Amruta , I come with my recipe is 'Crispy and Fluffy Medu Wada'. These is very easy and simple recipe. Medu Wada is a South indian Fritters. It is generally eaten as a breakfast or a snack. Try to my recipe at your home and drop comments for me, Do not forget like, share and subscribe.

Ingredients:

  • Urad Dal -3 bowl
  • Rice -1 bowl
  • Cumin's seeds
  • Fresh coriander leaves
  • salt as per Taste
  • Oil for frying


Method:
  • Take Urad Dal - 3 bowls and wash it with water for 2 times and also Take Rice 1 bowl with water, wash it.
  • Transfer urad dal into big bowl and take rice separately into bowl
  • Soak urad dal and rice 🍚 in about 3-4 hrs.
  • After soaked urad dal and rice, strain the soaked through sieve and drain all water.
  • Then urad dal and rice add into blender jar and blend into little coarse paste.
  • Do not add any water while blending or use minimum water while blending.
  • Transfer the blended dal and rice 🍚 into big bowl.
  • The batter should be thick, The right consistency is very important or otherwise, you will not be able to get the wada shape.
  • Add fresh coriander leaves, cumins seeds, salt as per taste to the batter, You can add green chilly, ginger, dry coconut paste. I'm not adding this contents, but you can try to this ingredients to batter, mix it very well.
  • Heat the oil in a frying pan in medium flame, wet your palms and take a lemon 🍋 size batter.
  • Make hole in the center and slide it into the hot oil.
  • The wada should float on top of oil. Fry it on medium flame. Your oil is not too hot, otherwise wadas would not cook evenly.
  • Fry on both sides till it becomes golden brown in color.
  • Serve the hot medu wada with sambar or chutney.

Crispy Beetroot And Sprouts Cutlet / Patties Recipe

 Welcome Guys, I'm Amruta, So guys, I again Come with my easy and delicious Cutlet/Patties recipe. Crispy Beetroot Cutlet/Patties made with Beetroots, Potatoes, Spices and you can use any sprouts like Mataki, Moong,etc..., The  Rava and rice flour use for coating. Its' Healthy and So yummy recipe.

Ingredients:

  • Grated Beetroots 3 Nos.
  • Boiled Potatoes 4 Nos.
  • Boiled Sprouts Like I used Boiled Mataki (Pitcher) in this Recipe - 1 small bowl
  • Chopped Onion -1
  • Paste of Green Chilly-Ginger-Garlic-Cumins Seeds.
  • Garam Masala -1 tbsp
  • Red Chilly Powder- 1 tbsp, Turmeric Powder - 1/2 tbsp
  • Coriander Powder 1/2 tbsp
  • Little bit of suger
  • Salt As per Taste
  • Fresh Coriander Leaves

Method:
  • Grate Beetroots and Squeeze the Juice out.
  • Very less Water taken into Mataki .
  • Suppose,If Take 1 Bowl mataki then Add Water 1/2 Bowl into Mataki 
  •  Add Turmeric and pinch of Salt in Mataki and Boiled  them.and Also  Potatoes for Boiling take into Cooker.
  • After Cook Potatoes and Mataki Cool Them. And All Water Strain Out From Mataki.
  • Mash Potatoes from Masher or You can Grated 
  • Mataki is Slightly Grinded by Mixer , No need smooth Paste.
  • In Big Mixing Boil , Add Mashed Potatoes, Add Mataki, Add Grated Beetroots
  • Chopped Onions, Add paste of Green chillies-Garlic-Ginger-Cumins seeds
  • Add Red Chilly Powder, Coriander Powder, Turmeric Powder
  • Add Garam Masala, Little bit of Suger
  • Add Salt as per taste.
  • Mix it all together to form ball.
  • Make a small Flat Cutlets/ Patties
  • Take Rava and Rice Flour mixture in another Plate For Coating and Deep Both Sides of Cutlets/Patties into this mixture.
  • Shallow Fry in Refined Oil on both sides.
  • Enjoy!! Healthy and Delicious Beetroot Cutlets /Patties for a snack or as a side dish

Crispy Corn Cutlet Snack Recipe

 Welcome Guys, I'm Amruta , So I come with my simple  Snack Recipe, It's so delicious ,Guys try to this my recipe at your home, It's simple and quick to prepare and taste really Yum!

Ingredients:

  • Corn Seeds
  • Boiled Potatoes
  • Chopped onion
  • Chopped green chillies
  • Red chilly powder
  • Chopped Ginger-Garlic
  • Coriander powder
  • Garam masala
  • Turmeric 
  • Salt As per Taste
  • Rice Flour (For Coating)
  • Rava , Fresh Coriander Leaves             


Method:
  • Smash Boiled Potatoes
  • Grinded and make fine paste of ginger-garlic -green chilly paste
  •  Mixer crushed slightly corn seeds, no need to make very smooth paste of corn seeds
  • Transfer to the mixing Bowl. Add smashed potatoes, add green chilly-ginger-garlic Paste
  • Add Slightly crushed Corn Kernels, Turmeric, Chilly powder ,Garam Masala,Chopped onion, 
  • Add Coriander Powder, Fresh Coriander Leaves and Salt as per Taste
  • Mix Everything Well and add if anything Required.
  • Divide the dough to small/ medium equal size balls , Shapen them depending on your choice. You can do Round Flat Disc/Oval/ Heart shape / use any cookie cutter to give special shape.
  • In a small Bowl, Mix Rice flour and rava for coating.
  • then all cutlets coated by mixture of rice flour and rava.
  • The Coated Cutlet can be deep fried/ shallow fried on Tawa
  • Serve Crispy Corn Cutets enjoy eat with green chutney or tomato ketchup.

Indian Spicy Fish Curry

 Welcome Guys, I'm Amruta, How are you??, So guys I share my 'Indian Spicy Fish Curry', It's so awsome curry ,Typically  this fish curry can prepared with many varieties of fish like Pomfret, Anchovies and Mackerel. So Let's start recipe and do not forget share, comments and subscribe.

Ingredients:

  • Chopped Onion 4 nos.
  • Chopped Tomato 2 nos.
  • Grated coconut 1/2 shell
  •  Byadgi Chilies 5-6 nos.
  • Chopped Ginger-Garlic 1 1/2 tsp
  • White sesame 1 tsp
  • Cumin seeds 1 tsp
  • Coriander seeds 2tsp
  • Fish Pieces for Curry 2 or 3
  • Kokum 3-4 
  • Fresh Coriander Leaves for garnishing
  • Salt as per taste 
  • Red chilly powder 2 tsp
  • Red chutney masala 2 tsp
  • Turmeric 1 tsp
  • Coriander Powder 1 tsp



Method:
  • Take Byadgi chilies soak into water for 15 mins.


  • Fish Pieces fry in oil on medium flame about for 2-3 mints. then transfer to plate and cool it.




  • Chopped Onion, Chopped Tomato, Grated Coconut, Chopped Garlic-Ginger, Cumins seeds, Coriander seeds, White Sesame seeds  and Soaked Byadgi Chillies add into mixer Jar and add Water.

  • Then grinded them to make fine paste.



  • Take Oil in pot on medium flame. 

Grinded paste add into hot oil.

Add water and mix well.


  • Add water and cover it. cook it  till 10 mins.


  • After that add Turmeric, Chilly Powder, Coriander Powder, Red chutney masala, add Kokum 3-4 pieces and Add Fried Fish Pieces and Add Water as your Requirement .

  • Mix together very well and cook it very well till 15-20 mins.


  • spread chopped Fresh Coriander Leaves.
  • Serve Spicy ,Tangy Fish Curry  with Rice, Chapati, Roti and Enjoy this Dish.

Maharashtrian Traditional Spicy Snack Bakarwadi Recipe

 Welcome Guys, I'm amruta, How are you??, So guys I come with my Maharashtrian Traditional Spicy Bakarwadi Recipe, It's very simple recipe and so delicious snack.This spicy snack is an all time favorite of the Marathi people and is a must make for festival. This snack is easily available in market ,too, But it is always pleasure to try out new recipes at home, especially when this are not specific to your region, Let's have a look at how it is made

Ingredients:

  • Maida (all purpose flour) -1 cup 
  • Besan (bengal gram flour)- 2 tbsp
  • Salt as per taste , hot oil (mohan) 2 tbsp
  • Grated dry coconut
  • Fennel seeds 
  • Cumins seeds
  • Coriander seeds
  • Sesame seeds
  • Chopped Ginger
  • Chilly Powder 
  • fresh Green Coriander Leaves
  • sweet tamarind- jaggery chutney
  • oil for frying


Method
For Dough:
  • Take maida in bowl ,add besan ,salt  and mix well
  • Take hot oil 2 tbsp (mohan) , Water add them and make dough 
  • dough make is tight  and stiff and not make sought and cover it for 20 mins.
For Stuffing:
  • Take fennel seeds, Cumins seeds, Grated dry Coconut, Chopped Ginger, Sesame Seeds, Coriander seeds and chopped fresh Coriander leaves
  • Add salt as per taste, 1 tbsp Sugar,Chilly Powder
  •  Roasted them and Grind by grinder but not make Thin paste.
  • It's make Thick stuffing.
For Frying:
  • Roll One portion of dough into big circle like as a Chapati. Keep the Circle's edges is thick
  • apply sweet Tamarind-Jaggery chutney on circle , Guys  I already Posted This Tamarind -Dates-Jaggary Chutney recipe, It's very simple.
  • You can search my post of this Sweet Tamarind-Dates-Jaggery chutney and try for bakarwadi.
  • Guys You can spread Thick Shev on sweet chutney,  But I'm not use shev because  It's not available in my kitchen for wadi .So If Shev available in your home then you can use in stuffing .
  • The grinded Stuffing spread out over on the Rolled circle.
  • Press stuffing by using rolling pin (Belan) across.
  • Fold the Rolled circle in circular motion.
  • Cut into pieces as per your requirement , cut pieces into small or big shape.
  • Cuts all pieces are little press side of stuffing portion due to stuffing not spread into frying oil and proper seal edges. 
  • Heat oil on medium flame for frying
  • Deep fry Wadies on law flame.
  • And serve it .

Quick Breakfast "RAVA -DOSA"

 Welcome Guys,  RAVA DOSA is very easy, nutritious, Healthy and delicious Recipe. This Indian breakfast made with Rava(semolina), Rice flour, Ginger, Green chilies, Cumin seeds and curd.

RAVA DOSA is Instant dish and Quick recipe as compare than traditional Dosa.

Traditional Dosas are made by soaking and blending rice and lentils to a batter. This is then fermented overnight and then make dosas, This is 2 days process, But RAVA DOSA recipe is made in few minutes.

Ingredients:

  • Rava 2-3 bowl
  • Rice flour 1 bowl
  • curd 2 tsp
  • Green chilies 2-3 nos
  • Ginger 2 inch
  • Cumin seeds 1 tsp
  • Chopped onion 1 no (optional)
  • pinch of sugar and baking soda
  • salt as per taste
For Tadaka:
  • Oil, mustard seeds and cumin seeds  
Recipe:
  • Take 2-3 bowl Rava and 1 bowl Rice flour, Add water into Rava, stir it constantly and avoid any lumps, consistency will be not much thin and not much thick. Keep aside for 5 mins

  • Add water into mixture to make medium thick batter
  • Take Curd, Green chilies 2-3nos, Ginger 2 inch, Cumin seeds into mixer jar and grind all.


  • Grinded mixture add into Rava batter. mix well.
  • You can add chopped onion, this is optional,But I used in my recipe chopped onion 1 no, Salt as per taste and pinch of baking soda and sugar.

  • Mix very well.
  • Heat oil in pan, Add mustard seeds and Cumin seeds for Tadka. When they are starts pop up then gas turn off. and This Tadka transfer into rava batter.
  • Mix well together
  • If batter is too thick and you require water in rava then add some water and mix well. To make sure that it has thick consistency.
  • Heat same pan on medium flame, which for using tadka.
  • Grease oil on surface on tawa.


  • When tawa is medium hot, reduce flame to law and pour a ladle full batter and spread into circle with help of ladle.


  • drizzle 1 tsp oil around the edge.
  • Cook until color of top surface changes from white to off-white and bottom size turns light brown for approx. 2-3 mins.

  • Flip it again and cook to 2 mins
  • Transfer into the plate and Serve with tomato ketchup or green chutney.



Tip : 
  • You can adjust consistency of batter, Runny batter or very thin batter creates Porous texture, Consistency of batter determine of the texture of RAVA DOSA.

Maharashtrian Breakfast - " Green Moong / Green Moong Dal Dosa"

 Welcome Guys, I'm Amruta , I come with very easy and nutritious dish " Green Moongdal Dosa". It's One of the healthy dish, which is rich in proteins, high in fibers, has low calories. So you can try to this recipe at home.

Ingredients:

  • Soaked Green Moong / Green moong daal as per your requirements.
  • gonger, green chillies , cumins seeds
  • salt as per tast
  • pinch of baking soda
  • curd
  • Rice flour
  • Rava
  • water 
  • as needed little suger, fresh coriander leaves

Method :
  • Soak the green moong or green moong dal overnight. then next morning drain the excess of water from moong/ moong dal. grind the green moong dal/ green moong in mixer to make fine paste like we do for dosa batter, and transfer into big bowl or pot.
  • add rice flour and Rava into mixture of green moong/ moong dal. 
  • add grinded paste of ginger, green chilies,cumins seeds and curd 
  • add baking soda , little bit of sugar , fresh coriander leaves
  • salt as per taste, mix properly 
  • adjust the consistency of the batter by adding water.
  • Heat the tawa, and Pour batter onto tawa and spread it in circular motion into a thin layer like a dosa.
  • Cover Dosa with the lid so that it cooks properly on medium flame. add oil on either side and flip it and again add oil to the dosa .
  • cook till its gets cook nicely from both sides.
  • Your moong dal / green moong dosa ready to serve.
  • Eat it with coconut chutney or fresh curd or tomato ketchup.
