Mharashtrian Traditional Dish - "MASALE BHAAT WITH SOYABEAN or SOYA-PULAO"

Welcome Guys, I'm Amruta, How are you?, So guys Let's see, I come with my Maharashtrian traditional dish for you, and The MASALE BHAAT (without soybean 😜😉) is it's my all time favorite dish of handmade by my mom😀

but I have soybean use in my recipe and the soya chunks which are protein rich.

Nutritious soya granules and rice sauteed in ghee with fresh vegetables and spices and cooked like a normal pulao or (in my language 😜😀) Masale bhaat making it a well balanced meal in itself.

 Its's spicy, simple and so delicious recipe. Do not forget to subscribe, comment and share.



Ingredient:

  • Basmati rice or Your regular rice
  • Bay leaf's , chopped green chilies 
  • Chopped onions, chopped tomato, cauliflower, capsicum, pieces of potatoes, You can use any vegetables like brinjal , green peas ,etc.
  • Fine paste of ginger-garlic pieces, cumin seeds, cardamom, cloves, cinnamon sticks, If you wants so spicy, then You can use black paper 
  • Chilly powder, salt as per taste, water

Method :
  • To take  basmati rice or regular rice, washed and soaked in it water for about 10-15 mins.

  • Take Soya chunks as per require in hot water for about 15 minutes, and add turmeric powder and salt because remove the raw smell.
  • After 15 mins, soya chunks almost double in size and drain excess water


  • To take pieces of ginger and garlic, coriander seeds, cumin seeds, cloves, cardamom pieces, cinnamon stick and crush them make a very fine past by okhali (mortar) or by grinder. 


  • Pot place on gas, add oil and heat on medium flame, then add bay leaf's, cumin seeds, green chilies, chopped onions, it's cooked while being it get golden brown color.


  • Add chopped tomatoes and sliced potatoes. You can add any veggies like cauliflower, brinjal, green pease etc. and saut them.



  • Add drained soya chunks 


  • Add fine paste of masala and sauteed very well.


  • water placed on another gas for boil


  • Then add strained basmati or regular rice and mix well for about 5 mins. 
  • Add chilly powder and mix together.

  • Add 2 to 2 1/2 glass of boiled water and salt to taste.



  • cover the plate on pot about 10 min.

  • After 10 mins, open the cover plate and saute, looking rice will become start fluff and add some hot water and cover it about  10 mins.



  • Served Hot SOYA-MASALE BHAAT or SOYA-PULAO, Garnish with fresh coriander leaves.




  • So guys ready delicious Masale Bhaat and serve it.
  • You can use Roasted cashews for garnishing , its help to make dish so yummy.

KAT-WADA recipe

Welcome guys,  I'm Amruta,  how are you??,  so guys let's see my simple and delicious Maharashtrian snack 'KAT-WADA'  recipe. It's so yummy. This is Kolhapur special recipe, the fried wada is served with hot and spicy curry known as KAT or tarri. 

  • For KAT method:

Heat the oil in a pan, after heat add chopped onion, add ginger- garlic  and mix it, fry it until gets light golden colour after that add sliced dry coconut  mix well again fry upto 3-4 mints. Then turn off gas and cool it. 

Transfer mixture in grinder by grinding , use some water while grinding. 

Take oil in pan heat on medium flame,  add this grinding mixture and mix it well and fry about 3-4 mints after that add red chilly powder,  turmeric,  onion- garlic masala(regular red chutney), salt as per taste  and fry mixture about 2-3 mints then add hot water and boil the Kat well on medium flame for about 7-8 mints.and spicy  Kat is ready for vada. 

  • For Batata wada stuffing method:

Take a pan into oil heat on medium flame,  then add asafotida ,  mustard seeds, cumins seeds, fry them after add curry leaves, green chilly pieces, chopped onions, fry them very well for about 3-4 mints, then add  turmeric, add  chopped boiled potatoes  and salt as per taste, mix it well for about  2-3 mints and gas turn off and cool it,  and potatoes  do not mash completely , some pieces should be left  behind. 

And stuffing is ready for wada. You can make small or big wade as per your requirement. 

  • For batata wada batter method:

Take besan into big bowl,  add rice flour,  turmeric, salt as per taste and pinch of baking soda and add little water,  mix very well. 

No lumps on besan should be formed and consistency of batter should  neither too thick and not too thin,  it should be a little thick.  So guys our batter is ready. 

  • For KAT Wada method:

Heat up oil in a pan,  dip vade in the batter and drop them in a hot oil. It's frying both side very well. And take it out on tissue paper.  So guys batata wada is ready. 

Serve some hot Kat into serving dish, And wada in it. Garnish with chopped onions, chopped fresh Coriander leaves, several. 

Serve KAT-WADA with sliced bread.

Most Popular Maharashtrian Snack - MISAL PAV

MISAL PAV is the most popular street food of Maharashtra. It is made by Usal (sprouts), Spices, Farsan and served with Pav chopped onion and lemon slice. It's so yummy, spicy and my favorite snack recipe 😋😋 , I hope you also like this recipe. In Marathi language, the word 'MISAL' means mixture.

Actually Misal curry made by moth beans but I have used various sprouts using moth beans, moong beans, Chana, you can add any sprouts.

I request to check my other snack recipes with this post of MISAL PAV.

It include other recipes like BATATE VADA, KAT-VADA, SANDWICH, CRISPY CORN CUTLET, TAWA-PIZZA, KANDE-POHE.

My MISAL PAV recipe is step by step made by my own way.


Ingredients:

  • Boiled 2 bowls sprouts like Chana, Moong, Moth beans etc.
  • Chopped onions 3 nos
  • Tomato 2 nos
  • Ginger and Garlic Cloves 5-6 
  • Cumin seeds 1 tsp
  • Coriander seeds 1 1/2 tsp
  • Garam masala/Pavbhaji masala 2 nos
  • Kolhapuri Red kanda-lasun masala 3-4 tsp( as per your spicy taste)
  • Turmeric powder 1 tsp
  • Salt as per taste
  • Oil 1 tsp
  • Water as per your required consistency
For garnishing:
  • Chopped onion 2 nos
  • Lemon slices
  • Chopped Coriander leaves
Recipe :
  • Take Sprouts in pot, Add turmeric, salt and water in sprouts.
  • Take pot into cooker on gas,  take three whistles from cooker and cool it.  another gas used for to make masala.

  • In pan put Coriander seeds, Cumin's seeds, Chopped onion, tomato, ginger, garlic and roast them very well then transfer to a plate. keep aside for cool.
  • This roasted mixture and water grinding by grinder.

  • Pot take on medium flame, add oil, mustered seeds, cumin seeds When they are start pop up then add grinded masala mix well.



  • Cook 5 min on low flame and stir it again and again until make it thick paste. 
  • Add Kolhapuri Kanda-lasun masala, Turmeric Powder, Garam masala/Pavbhaji masala, I used pavbhaji masala and stir occasionally and to avoid the grinded masala burning from bottom, it will be releases oil.
  • Add cooked sprouts with stock 

  • Add Hot Water as per your requirement and add salt as per taste.
  • Cover by plate and bring it boil.

  • It's boiling well due to become a spicy flavor, good taste and reddish color  of misal then turn off gas and ready for serving

For Garnishing:
  • On misal for garnishing add chopped onions, Farsan, coriander leaves And Enjoy Misal with Pav.

Tip:
  • Grinded masala mixture sauteed in oil 7-8 mins, Or till oil starts separating from the mixture.
  • Adding Hot water in cooked masala mixture, cause oil starts floating on top it help to make CUT or TURRY.

Mixed Sprouts With Aaloo Chaat

 Hi !! Welcome guys, I'm amruta , How are you?? So guys, I'm come with take a new and very easy and healthy recipe. I thing you will definitely try to this recipe for your health. let's start recipe,

Ingredients:

  • Boiled mixed sprouts with Boiled potatos
  • juicy pomegranet
  • chopped onion,tomatos,coriender ( you can use any veggies)
  • garam masala
  • chaat masala
  • tomato ketchup / tamarind chutney
  • sweet curd
  • murmure, farsan, sev
Method:
  • In pan boiled sprouts and potatoes (cut into pieses) roasted separately and transfer to same plate.
  • It to same pan add oil ,after heated add little chopped onion ,tomato mix it, then add chilly powder, tomato ketchup, turmeric, coriander powder, chaat masala ,salt , pinch of sugar and mix well cooked 2 mints then transfer into same plate and mix it very well , add again little bit of chaat masala, pomegranate, tamarind chutney / tomato ketchup,  salt . you can add any spices ,souses as per your requirement. add murmure / fursan. it again mix well .
For garnishing :
  • chopped onions , chopped tomatoes , sweet curd, tamarind chutney/ tomato ketchup, sev , pomegranate, fresh coriander leaves garnishing spread over the sprout chaat and serve it.

Sweet Tamarind - Dates Chutney for any Chaat

 

Hi , Welcome Guys , How are you??, I'm amruta, So guys I come with take new delicious recipe for you. It's very simple recipe , these sweet chutney can be had for making Chaat items like panipuri, Bhelpuri,  sevpuri, aloo tikki, etc..for all your chaat and fried snacks.

 Method:

  • In Bowl take water for soak seedless tamarind and seedless dates upto 20 mints. after soaked In pan take the this tamarind ,dates and water, cook for about 8-9 mints on law flame.



  • Add grated Jaggary , little bit of chilly powder , turmaric , pinch of salt and mix well and simmer for 1-2 mints. The chutney mixture is ready now.Let it cool


  • Grind the chutney in grinder till smooth. add some water if required while grinding. strain the chutney through strainer. Store the tamarind dates chutney in the bowl in refridgerator.
  • Add tangy sweet tamarind - dates chutney to the chaat or indian snacks that you make at home.
You can also serve it with chaat snacks like bread pakoda, pakoda, batata wada, samosa ,etc..any chaat.

 


Green Chutney for any Chaat

 A quick chutney that can be used for many chaat snacks like, ragada pattice, sevpuri, bhel puri, samosa  etc.

Method: 

  • green chutney made from fresh coriander leaves,  If you want then you can add  mint leaves also. and add them green chillies , cumines seeds , some water and pinch of salt  and its all grind in grinder , make a fine paste. so ready for chaat.
